What each ingredient does

Green tomatoes
Provide the bulk of the relish and soften during the long brine and boil.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
White mustard seed
Contributes pungent flavour that mellows during long cooking.
Cabbage
Adds bulk and crisp texture that softens as the relish simmers.
Vinegar
Acts as the preserving liquid and supplies acidity that sharpens the relish.

The step that matters

Boil for three hours in the kettle. Long boiling in acidic vinegar softens the vegetables and blends the flavours. Stopping early leaves the relish crunchy and sharp, so it should simmer until the vegetables are tender.
