Candy of Any Flavor

Ingredients

Directions

  1. In a large vessel, mix sugar and heat over a brisk fire, ensuring it doesn't burn.

  2. Boil for 15 minutes, then test by dropping a small portion into cold water.

  3. If it forms a thread when pulled, control the heat to keep boiling without burning.

  4. Continue testing until it becomes hard and brittle in cold water, then remove from heat.

  5. Stir in flavoring and pour into lightly greased shallow dishes to cool.

  6. Once cool enough to handle, pull and roll into sticks or desired shapes.

  7. Alternatively, omit cream of tartar and stir until it forms a soft, firm white cream for bonbons.
