Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Good rich cream
Its fat forms the foam structure when beaten, giving the whipped cream body and richness.
Egg white
Its proteins trap air and help the cream hold its shape when it is not thick enough.
Gelatin
Sets when cooled, helping the whipped cream hold its shape and resist weeping.

The step that matters

Add the egg white or gelatin only if the cream is not thick enough. Over-beating cream past stiff peaks can cause it to turn grainy and separate into butter, so check the texture before adding extra stabilisers.
