Seaside Clam Bake

Ingredients

Directions

Build the oven

  1. Prepare a level floor of stones for the oven and pile seaweed on it, burning it until the stones crackle when water is sprinkled on them.

  2. Sweep off the ashes and spread a thin layer of seaweed on the stones.

Cook

  1. Arrange the rinsed clams on the hot stones, making a low center and a ridge around the edges.

  2. In the center, add halves of chicken, green corn, cleaned potatoes, and bluefish or pickerel.

  3. Cover the entire setup thickly with seaweed and place a large piece of canvas over it to trap the steam.

  4. Cook for about 45 minutes, until the clam shells in the ridge are fully open.

Serve

  1. Serve with melted butter, salt, vinegar, pepper, and brown bread.

What each ingredient does

Clams
Their shells open with steam, and their juices flavour the other foods in the bake.
Chicken
Its fat and juices moisten the meat as it cooks slowly in trapped steam.
Potatoes
Their starch cooks through in the steam, giving a soft, filling texture.
Green corn
Steam cooks the kernels gently, keeping them sweet and juicy.
Bluefish or pickerel
Its flesh cooks quickly in steam, becoming moist and flaky.
Melted butter
Adds richness and fat that complements the steamed seafood and vegetables.

The step that matters

Covering the bake with seaweed and canvas. Heavy covering traps steam so the food cooks evenly. If steam escapes, the chicken and fish can dry out or cook unevenly while the clams open too early.

Swap the seaweed

How well each one fits the dish's main ingredients (clam, chicken, corn, potato, bluefish, butter, vinegar):
