What each ingredient does

Berries
Provide the fruit itself, along with most of the flavour and texture.
Sugar
Adds sweetness and draws juice out of the fruit, helping it keep in the can.

The step that matters

Cook slowly for 10 minutes. Gentle heat softens the fruit and dissolves the sugar without breaking the berries apart. Boiling hard can turn them mushy and cloudy.
