Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Wash the beef.

  2. Cover the beef with boiling water in a large pot. Add the salt pork.

  3. Ensure all meat is clean and untainted.

  4. Bring the mixture to a boil. Skim off any impurities, repeating if necessary.

  5. Reduce the heat. Let the mixture simmer all day.

Make the loaf

  1. Remove the meat. Chop the meat. Pick out any hard pieces and bones.

  2. Gradually add the boiling liquid until the mixture is thick. Add salt to taste. Add pepper to taste.

  3. Butter a deep bread tin. Pack the meat mixture solidly in the tin.

  4. Place the tin in a 400°F (200°C) oven for 10 minutes or until heated through.

Cool and serve

  1. Cool the loaf in a cold place. If the loaf is not solid enough, apply pressure.

  2. Loosen the loaf from the edges. Hold the loaf in boiling water for 1–2 minutes. Turn the loaf out and slice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat body and rich flavour once simmered and chopped.
Salt pork
Adds fat and savoury flavour to the meat mixture, keeping it moist.
Crackers
Absorb liquid and help bind the chopped meat into a loaf that holds its shape.

The step that matters

Gradually add the boiling liquid until the mixture is thick. Adding liquid slowly lets the meat absorb it evenly, so the mixture becomes thick enough to pack and set firm when cooled. Adding too much at once makes the loaf wet and unable to hold its shape.
