Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

Assemble the dish

  1. In a shallow baking dish, layer grated stale bread crumbs.

  2. Add a layer of thinly sliced raw onions.

  3. Dot with bits of butter and sprinkle with pepper and salt.

  4. Repeat layers until the dish is full, finishing with a layer of crumbs mixed with melted butter.

  5. Pour sweet milk over the top (about 1 cup for a quart dish).

  6. Add cream if desired.

Bake

  1. Bake for 45 minutes to 1 hour, until the onions are well cooked.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Forms the crumb layers that soak up milk and hold the dish's structure while baking.
Raw onions
Soften and turn sweet as they cook, providing the main flavour and bulk.
Butter
Adds richness and helps the top crumbs brown in the oven.
Sweet milk
Moistens the bread and sets into a custard-like binder around the onions.

The step that matters

Bake until the onions are well cooked. Raw onion slices stay firm and sharp if underbaked. Milk and heat need time to soften the onions fully and set the liquid, so check that the onion pieces are tender through before serving.

Swap the onion

How well each one fits the dish's main ingredients (bread, butter, pepper, milk, cream):
