Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the rolls

  1. Cut the tops off the French rolls and remove the inside crumbs.

  2. Fry the crumbs in butter until brown.

Fill and bake

  1. Mix the fried crumbs with oysters, additional butter, coarse sea salt, and pepper.

  2. Fill the empty rolls with the oyster mixture.

  3. Bake in a hot oven at 400°F (200°C) for a few minutes.

  4. Serve immediately.

What each ingredient does

French rolls
Hollow shells that hold the filling and crisp up in the oven.
Butter
Browns the crumbs for flavor and adds richness to the filling.
Oysters
Provide the main filling, adding briny, savory flavor and tender texture.
Bread crumbs
Absorb butter and juices, binding the filling and adding toasty flavor.

The step that matters

Frying the crumbs until brown. Browning crumbs in butter through the Maillard reaction builds nutty, toasted flavor. Pale crumbs taste flat and soften in the filling.
