German Potato Salad

Ingredients

Directions

Prepare

  1. Boil the potatoes with skins on; when cold, peel and slice them onto a platter.

  2. Fry the diced pork fat in a pan until golden brown and crisp, then remove and set aside.

Make the salad

  1. In a bowl, gently mix the sliced potatoes with the hot pork fat, then add salt, pepper, onion, parsley, and vinegar.

  2. Finally, add the crisp pieces of pork just before serving.

  3. Serve the salad cold, mixing only right before you want to eat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the salad and absorb the fat and vinegar dressing.
Pork fat
Adds rich flavour and coats the potatoes, while the crisp pieces add texture.
Strong vinegar
Adds acidity that brightens the rich pork fat and balances the flavour.
Onion
Contributes sharp, pungent aroma and a bit of bite.

The step that matters

Dress the potatoes while they are still warm. Warm potatoes are porous and absorb the hot fat and vinegar well, so flavour penetrates them. Cold potatoes stay bland on the surface. Adding the crisp pork just before serving keeps it from going soft in the dressing.

Swap the parsley

How well each one fits the dish's main ingredients (pork, vinegar, pepper, potato, onion):

  1. Garlicfits better
  2. Thymefits better
  3. Parsleythe original
  4. Dillfits about as well

Fit is the average pairing score against pork, vinegar, pepper, potato, onion. Candidates are from the same food group and used in at least 100 recipes.
