Roast or Baked Meats

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Rub the meat all over with coarse sea salt and black pepper.

  3. Place water in the dripping pan and add more as needed.

  4. Put the meat in the oven and bake slowly, basting frequently.

  5. Turn the meat occasionally until tender.

  6. Once tender, remove the meat and stir in a little flour mixed with water to avoid lumps.

  7. For lean meats, add butter to the gravy; for game and pork, include sweet herbs.
