Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat, which becomes tender during slow simmering in the liquid.
Salt pork
Adds fat and savory flavor that enriches the broth as it cooks.
Potatoes
Release starch as they cook, thickening the broth and adding body to the stew.
Slices of bread
Soak up the hot broth as they steam, becoming soft and absorbing flavor.

The step that matters

Covering the pot while the bread steams. The lid traps steam so the bread softens through without drying out or scorching on top. Lifting the lid too early lets heat escape and leaves the bread underdone.

Swap the potato

How well each one fits the dish's main ingredients (veal, pork, pepper, bread):

  1. Capsicumfits better
  2. Tomatofits about as well
  3. Potatothe original
  4. Carrotfits about as well

Fit is the average pairing score against veal, pork, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
