Vegetable Oysters, or Salsify

  1. Scrape and slice the salsify thin.

  2. Boil in water until tender.

  3. Season with pepper and coarse sea salt.

  4. Mix flour with a little cold water and stir in a large piece of butter.

  5. Toast some bread and lay it in a deep dish.

  6. Pour the salsify mixture over the bread and serve as you would oysters.

  7. Optionally, add a little milk to the boiling water.
