Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they heat, giving the dumpling its firm, tender structure.
All-purpose flour
Thickens the milk and gives the batter body so it holds its shape.
Milk
Forms the liquid base that gives the dumpling its soft, creamy texture.
Sugar
Adds sweetness and helps the top brown lightly in the oven.

The step that matters

Bake until set. Eggs firm as they heat, so the dumpling should be removed once just set. Overbaking tightens the egg proteins, making the texture rubbery and causing liquid to weep.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, flour, milk, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against egg, flour, milk, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
