What each ingredient does
- White sugar
- Feeds the yeast during fermentation, producing alcohol and carbon dioxide while adding sweetness.
- Yeast
- Ferments the sugar, producing alcohol and carbon dioxide that gives the beer its fizz.
- Water
- Forms the bulk of the liquid in which the sugar dissolves and the yeast ferments.
- Essence of spruce
- Provides the resinous, aromatic flavour that defines the beer.
The step that matters
Bottling after fermentation. Bottling before fermentation has finished can leave sugar still converting to carbon dioxide, building pressure inside the bottles and risking breakage. Wait until fermentation is complete before bottling.
