Hoarhound Candy

Ingredients

Directions

  1. Cut the fresh hoarhound stalks into small pieces.

  2. Scald a pitcher, then fill it two-thirds full with the hoarhound, pressing it down.

  3. Fill the pitcher with boiling water and cover tightly to prevent steam from escaping.

  4. Place the pitcher close to the fire until it reaches a hard boil.

  5. Strain the mixture and add loaf sugar to create a paste.

  6. Boil the paste over heat until it becomes sufficiently hard.

  7. Test a small amount in water; if it is crispy, it is done.

  8. Shape the mixture into sticks.
