What each ingredient does

Coffee
Provides the flavour compounds that are extracted into the hot water.
Water
Acts as the solvent that draws flavour out of the coffee grounds during brewing.

The step that matters

Keep the coffee hot without boiling it again. Prolonged or repeated boiling over-extracts the coffee, pulling out bitter compounds and giving a harsher, more astringent taste. Holding it just below the boil keeps it hot while preserving a smoother flavour.
