Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Softens the crumbs and forms the body of the sauce, giving it a smooth, thickened texture.
Dried bread crumbs
Absorb the liquid and thicken the milk into a soft, spoonable sauce.
Onion
Infuses the milk with mild savoury aroma, then is removed before serving.
Butter
Adds richness and flavour, and browns the coarse crumbs for a crisp topping.

The step that matters

Frying the coarse crumbs. Butter that is hot enough and stirring for the full two minutes lets the crumbs toast evenly. Too little heat leaves them pale and soggy, while too much browns them unevenly and can taste bitter.
