Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt-fish
Provides the main savoury flavour and salty character of the balls.
Potatoes
Bulk and starch that bind the mixture and give the balls a soft, tender interior.
Butter
Adds fat for richness and a softer, more tender texture.
Egg
Binds the mixture so the balls hold their shape while frying.

The step that matters

Frying the balls. Frying at too low a heat lets the balls absorb oil and turn greasy before they brown. Hot oil browns the surface quickly, sealing it and keeping the inside moist and tender.
