Fish Chowder

Ingredients

Directions

Prepare the fish

  1. Skin the fish by loosening the skin at the head and pulling it down towards the tail.

  2. Remove the bones and cut the fish into small pieces; wash in cold water.

  3. Boil the head and bones in 2 quarts of hot water.

Layer and season

  1. Layer the sliced potatoes and fish in a kettle, seasoning each layer with salt, pepper, and flour.

  2. Fry the salt pork until brown, then add the sliced onion and fry slowly for 10 minutes.

  3. Strain the pork and onion mixture over the fish and potatoes, pressing to extract the gravy.

  4. Pour 1 pint of hot water over the strained mixture to extract more flavor.

Simmer and finish

  1. Strain the water from boiling the head and bones into the pot, cover, and simmer gently for 10 minutes.

  2. Taste and adjust seasoning if necessary, then add 5 crackers.

  3. Cover and simmer for an additional 10 minutes before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Hold their shape as they cook and thicken the broth with their starch.
All-purpose flour
Thickens the liquid into a gravy as it cooks with the fat and juices.
Salt pork
Adds fat and savory flavor to the gravy after its fat is rendered and browned.
Onion
Adds sweetness and aroma as it softens slowly in the pork fat.
Cod or haddock
Provides the main flesh and mild flavor, which cooks gently in the broth.

The step that matters

Simmer gently after adding the liquid. A gentle simmer cooks the fish through without breaking it apart, while a hard boil toughens the flesh and breaks up the pieces.
