Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that becomes tender during long, gentle simmering.
Salt pork
Adds fat and savory flavor to the pan before the stew liquid is added.
Flour
Thickens the cooking liquid into a gravy and coats the veal.
Onion
Adds sweetness and aroma as it softens in the fat.

The step that matters

Simmer gently for 3 hours. At a rolling boil, meat proteins toughen and the liquid evaporates unevenly. A slow bubble keeps the veal tender and the gravy smooth.

Swap the onion

How well each one fits the dish's main ingredients (veal, flour, pepper, pork, rice):

  1. Capsicumfits better
