What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable gel as it cools.
Fruit juice
Provides the liquid and flavour that the gelatine sets into a dessert.

The step that matters

Soak the gelatine in cold juice before adding heat. Gelatine must hydrate in cold liquid so its granules swell evenly. Adding it dry or to hot liquid can leave lumps and weak setting.
