Sour-Milk Corn Bread

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a double boiler, cook the cornmeal, sour milk, salt, butter, and sugar for about 10 minutes.

  2. Let the mixture cool, then add the well-beaten eggs.

  3. Dissolve the baking soda in cold water and mix it in.

Bake

  1. Pour the batter into a shallow iron or granite pan.

  2. Bake at 400°F (200°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornmeal
Provides the main body and grainy texture of the cornbread.
Sour milk
Adds moisture and acidity that reacts with the baking soda to help it rise.
Eggs
Bind the batter and add structure as the cornbread sets.
Baking soda
Reacts with the acidic sour milk to produce gas that lifts the batter.
Butter
Adds fat for richness and a tender crumb.

The step that matters

Dissolve the baking soda fully before mixing it in. Baking soda needs to be evenly dispersed in the batter so it reacts with the acid in the sour milk throughout. Clumps can leave bitter spots and uneven rise.
