Truffles Au Naturel

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and brush the truffles well.

  2. Wrap each truffle in a slice of bacon, then in several folds of oiled paper.

Cook and serve

  1. Place them in hot ashes and let them remain for 1 hour.

  2. Remove the paper and bacon, and serve.

  3. Alternatively, bake them in a 400°F (200°C) oven wrapped in bacon and paper, but they will require a longer time.
