Ingredients

Directions

  1. Cut the chops from the neck of mutton without flattening them.

  2. Trim some flat bone from the ends of the chops.

  3. Place the chops and parings in a stew-pan with carrots, parsley, green onions, salt, and spices.

  4. Add 4 to 5 tablespoons of broth to braise the mixture.

  5. Once cooked, drain the chops and let them cool.

  6. Strain the cooking liquid through a fine sieve and reduce it to a glaze.

  7. Pare the chops nicely and coat them with the glaze.

  8. Arrange the chops on a plate and pour the soubise sauce into the center.
