Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Separate the egg whites and yolks into two pans.

  2. Grate a little lemon peel or orange flowers.

  3. Beat the yolks well, then add sugar and salt.

  4. Beat the egg whites until stiff peaks form.

  5. Gently fold the beaten egg whites into the yolk mixture.

Cook and bake

  1. Melt butter in an omelette pan over medium heat.

  2. Pour the egg mixture into the pan.

  3. Cook until the bottom is firm enough to hold the liquid.

  4. Carefully turn the omelette onto a serving dish.

  5. Bake in a preheated oven at 350°F (175°C) until well risen.

  6. Glaze the top and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites whipped to stiff peaks trap air for lift, and yolks add richness and set structure.
Sugar
Adds sweetness and helps stabilise the beaten egg whites.

The step that matters

Folding the beaten egg whites into the yolk mixture. Folding gently keeps the air trapped in the whipped whites. Stirring or deflating them makes the omelette dense instead of light and risen.
