Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the main body of the mould and provides the savoury flavour and protein structure.
Eggs
Yolks bind the mixture and help it set firm as it steams.
Bread crumbs
Absorb moisture and give the mould a tender, lightly textured body.
Butter
Adds richness and moisture, keeping the salmon from drying out during steaming.

The step that matters

Pour the bread crumb mixture over the salmon without mixing. Leaving the bread crumb and egg yolk layer unstirred keeps it distinct on top of the salmon. Overmixing can make the mould dense and uneven once it sets.

Swap the parsley

How well each one fits the dish's main ingredients (salmon, butter, egg, bread, pepper):

  1. Parsleythe original
  2. Capersfits about as well
  3. Nutmegfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against salmon, butter, egg, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
