Smothered Chicken

Ingredients

Directions

Prepare

  1. Wash the chicken well and wipe it dry.

  2. Place the chicken breast side up in a baking pan.

Smother and bake

  1. Pour in the boiling water with dissolved butter.

  2. Cover with another pan turned upside down, fitting the edges tightly.

  3. Cook slowly for 30 minutes.

  4. Lift the cover and baste with the butter water in the pan.

  5. Cover again and cook for another 20 minutes.

  6. Baste again and cook for an additional 15 minutes.

  7. Check if the chicken is done with a fork; it should take about 1 hour and 10 minutes.

  8. Baste one last time with a tablespoon of butter and cover.

  9. Leave in the oven for 10 more minutes until golden brown.

Make the gravy and serve

  1. Thicken the gravy with browned flour mixed with a little water, adding salt and pepper to taste.

  2. Boil the gravy once and pour a cup over the chicken, serving the rest in a gravy boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein; slow covered cooking keeps it moist and tender.
Butter
Adds richness and helps the chicken brown when basted in the pan.
Browned flour
Thickens the gravy and adds a toasted, nutty flavor.
Boiling water
Creates steam and a braising liquid that keeps the chicken moist.

The step that matters

Covering the chicken tightly while cooking slowly. The tight cover traps steam so the chicken braises in its own moisture. If the cover lifts or the heat runs high, the meat can dry out before it becomes tender.
