Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Forms a crisp, golden crumb coating that protects the chop while it fries.
Well-beaten egg
Acts as a binder so the bread crumbs stick to the chops.
Hot lard
Conducts heat to brown the coating and cook the chops through.

The step that matters

Carefully place the coated chops into the boiling lard. Lowering the chops into very hot fat sets the coating quickly so it browns rather than absorbing grease. Adding them gently prevents splatter and keeps the crumb from being knocked loose.

Swap the currant

How well each one fits the dish's main ingredients (bread, pepper, egg):

  1. Lemonfits better
  2. Figfits better
  3. Red currantfits better
  4. Currantthe original

Fit is the average pairing score against bread, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
