Mushrooms and Eggs

Ingredients

Directions

The book says “a sharp oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mushrooms

  1. Stew the halved mushrooms in water with butter, salt, and pepper for 10 minutes.

  2. Drain the mushrooms and place them in a deep dish.

Bake and serve

  1. Break enough eggs over the mushrooms to cover the top.

  2. Season with salt and pepper, then spread bits of butter and grated bread crumbs on top.

  3. Bake in a sharp oven at 400°F (200°C) until the eggs are set.

  4. Thicken the remaining liquid with brown flour and pour it over the dish before serving hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set when baked, forming the body and structure of the dish.
Mushrooms
Provide the main bulk, earthy flavour and moisture of the dish.
Butter
Adds richness and helps browning on the surface.
Brown flour
Thickens the reserved cooking liquid into a light sauce.
Bread crumbs
Form a crisp, browned topping over the eggs.

The step that matters

Baking until the eggs are set. Eggs firm as their proteins coagulate with heat; pulling the dish too early leaves a runny centre, while overbaking makes the eggs rubbery and dry.
