What each ingredient does

Green tomatoes
Provide the bulk of the pickle and a firm, tart texture once cooked.
Onions
Add savoury sweetness and body that softens into the pickle during boiling.
Brown sugar
Adds sweetness that balances the vinegar and helps create a thick, syrupy sauce.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp flavour.

The step that matters

Draining after the overnight salt stand. Salt draws water out of the tomatoes and onions. Draining them well removes that liquid so the vinegar and sugar mixture is not diluted and the pickle stays thick rather than watery.

Swap the onion

How well each one fits the dish's main ingredients (tomato, sugar, mustard, celery, pepper, vinegar):
