What each ingredient does

Rice
Forms the bulk of the croquettes and, as it cooks in water, gives the mixture its body.
Milk
Adds moisture and softness to the cooked rice, keeping the mixture tender.
Butter
Adds fat, which enriches flavour and keeps the interior soft.
Egg
Sets when heated, binding the mixture so the croquettes hold their shape.
Sugar
Adds sweetness and helps the outside brown during frying.

The step that matters

Stirring in the egg quickly after boiling. If the mixture is too hot or the egg is stirred slowly, the egg can scramble in lumps instead of blending evenly. Quick stirring spreads the egg through the mixture so it sets uniformly as it cools and binds the croquettes.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, butter, sugar, egg, bread):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against rice, milk, butter, sugar, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
