Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set, giving it a rich, smooth body.
Egg whites
Whip into a foam that forms the stiff, airy meringue topping.
Milk
Provides the liquid base that the eggs set into a custard.
Sugar
Sweetens the custard and helps stabilise the whipped egg white meringue.
Orange rind
Adds bright citrus aroma and flavour to the custard.

The step that matters

Pouring the hot milk into the egg mixture. If hot milk is added too quickly or without constant beating, the egg yolks can scramble into lumps. Pouring slowly while whisking gently warms the yolks so they thicken the custard smoothly.
