Buttered Eggs

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grease a small flat dish with some of the butter.

Bake and serve

  1. Season the eggs with salt and pepper, and sprinkle bread crumbs on top.

  2. Add the remaining butter in small pieces over the eggs.

  3. Bake in the oven until the whites are just set.

  4. Hold the dish before the fire for 1-2 minutes to brown the crumbs slightly.

  5. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a tender custard-like structure as the whites firm up in the oven.
Butter
Adds richness and moisture, and helps the crumbs brown as it melts.
Bread crumbs
Form a crisp, golden topping that contrasts with the soft eggs.

The step that matters

Bake until the whites are just set. Egg whites firm as their proteins coagulate with heat, while the yolks stay soft. Removing the dish once the whites are just set prevents the eggs from turning rubbery and dry.
