What each ingredient does

Onions
Fried until light brown, they build a deep, sweet savory base for the soup.
Tomatoes
Add acidity and body, giving the broth its tangy flavor and color.
Flour
Blended with cold stock first, it thickens the soup so it has body.
Fish
Cooked gently in the simmering broth until firm, it becomes the main protein.
White wine
Adds acidity and aromatic depth to the broth.

The step that matters

Blending the flour with cold stock. Flour added straight to hot liquid clumps and stays lumpy. Mixing it with a little cold stock first disperses the starch so it thickens the soup smoothly.
