What each ingredient does

Oysters
Provide the main flavor and texture of the sauce once minced and cooked through.
Egg yolks
Thicken the sauce and give it a smooth, rich body when gently heated.
Mushrooms
Add earthy depth and body to the sauce as they cook down.
White wine
Adds acidity and aroma, balancing the richness of the sauce.
Cream
Adds richness and a silky texture that softens the sauce.
Butter
Adds fat and flavor as the base for cooking the mushrooms and herbs.

The step that matters

Stir in the egg yolks and cream over low heat. Egg yolks thicken when gently heated, but if the sauce gets too hot they can scramble and curdle. Keeping the heat low and stirring steadily keeps the sauce smooth.

Swap the parsley
