Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Corn-beef Croquettes

Ingredients

Directions

Prepare the filling

  1. Pass the mashed potatoes through a colander.

  2. In a bowl, combine the hot potatoes with butter, cream, 1 egg, salt, pepper, and nutmeg. Beat thoroughly.

  3. Mix in the finely chopped beef, ensuring there is no gristle. Shape the mixture into rolls about 2 inches long.

  4. Place the rolls on a floured tray and refrigerate while preparing the remaining egg and bread crumbs.

Coat and fry

  1. Roll each croquette in the beaten egg, then in the crushed bread or cracker crumbs. Let them sit for 1 to 2 hours if possible.

  2. Heat the lard in a pan until boiling, about 2 inches deep.

  3. Carefully place the croquettes in a frying basket and plunge them into the hot lard.

  4. Fry until golden brown, then drain on paper towels.

Serve

  1. Serve with parsley and lemon on a folded napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the croquette and give a soft, tender interior.
Beef
Provides the savory meat filling that the potato mixture binds around.
Butter
Adds richness and moisture to the potato mixture.
Eggs
Bind the filling and form the coating that holds the bread crumbs in place.
Bread or crackers
Crushed crumbs form a crisp outer crust when fried.
Cream
Adds moisture and softness to the potato mixture.

The step that matters

Chilling the shaped croquettes before frying. Resting the coated croquettes firms the starchy potato and fat so they hold their shape. Without this chilling, they can break or leak in the hot lard.

Swap the nutmeg
