Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

To Roast Chickens

Ingredients

Directions

Prepare

  1. Clean the chickens and prepare a dressing with bread crumbs, melted butter, parsley, salt, and pepper.

  2. Fill the cavity of the chickens with the dressing.

  3. Turn the skin of the neck inside out and fasten it with a skewer or sew it shut, removing the thread before serving.

  4. Truss the chickens by pushing the legs under the skin and crossing them slightly.

  5. Skewer the legs and body together, then turn the wings back and skewer them to the body.

  6. Tie the legs together just below the drumsticks and secure with twine.

Roast

  1. Place bacon slices in a roasting pan and lay the chickens on top.

  2. Rub the breasts with butter and add a tablespoon of butter and boiling water to the pan.

  3. Baste the chickens with melted butter every 10 minutes, allowing 15 minutes per pound for cooking.

  4. 15 minutes before they are done, baste with butter, dredge with flour, and return to the oven to brown.

What each ingredient does

Young chickens
Provide the main roasted meat that the dressing and pan juices accompany.
Stale bread crumbs
Absorb juices and butter in the dressing, giving it a moist, soft texture.
Butter
Adds richness and moisture, and helps the skin brown as it bastes.
Bacon
Releases fat into the pan, adding savoury flavour and moisture to the birds.

The step that matters

Basting and final browning. Basting with butter and pan juices keeps the surface moist while the fat helps the skin colour and crisp. Adding flour near the end promotes a deeper golden browning, and timing it too early or late affects the result.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, bread, butter, pepper):
