What each ingredient does

Buckwheat flour
Forms the main body of the pancakes and gives them their nutty, earthy flavor.
Yeast
Ferments the batter overnight, producing gas bubbles that make the pancakes light and airy.
Baking soda
Reacts with the fermented batter to add extra lift and a lighter crumb.
Molasses
Adds sweetness and depth of flavor, and helps browning on the griddle.

The step that matters

Overnight rise in a warm place. The yeast needs time and steady warmth to ferment the batter. Too cold and the batter stays dense; too hot and the yeast can die or sour the batter.
