Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Stem the strawberries, slightly mash them, and sweeten to taste. Set aside.

  2. Rub the butter into the flour, which has been sifted with the baking powder and salt.

  3. Add enough milk to make a soft dough that can be rolled out easily. Mix quickly and lightly.

  4. Flour the board and rolling pin. Roll out the dough to ½ inch thick.

  5. Divide the dough into 2 parts. Lay one layer in a large baking pan.

  6. Dust the top with flour and lay the second layer of dough over it.

Bake and assemble

  1. Bake in a 400°F (200°C) oven for about 20 minutes.

  2. When done, carefully separate the two layers of cake with a knife.

  3. Place one layer on a platter, spread thickly with butter, then add a layer of sugared berries.

  4. Top with the second layer of cake, the remaining berries, and sugar.

  5. Stand in the open mouth of the oven until ready to serve, with a pitcher of rich cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough that bakes into the cake layers.
Butter
Rubbed into the flour to tenderize the cake and adds richness.
Baking powder
Releases gas during baking so the cake layers rise and become light.
Milk
Hydrates the flour so the mixture forms a soft, rollable dough.
Strawberries
Provide juicy, tart fruit flavor and moisture to the shortcake.

The step that matters

Mix the dough quickly and lightly. Overworking wheat flour once liquid is added develops gluten, which makes the shortcake tough instead of tender.
