Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Their proteins set gently as they heat, thickening the sauce and making it rich.
Whole egg
Adds more protein for setting, giving the sauce body and structure as it thickens.
Sugar
Sweetens the sauce and helps stabilize the beaten eggs while they are heated.
Sherry
Adds flavor and aroma and thins the mixture so it pours into the beaten eggs smoothly.
Lemon juice
Adds acidity that brightens the sweet, rich flavor of the sauce.

The step that matters

Heating the eggs gently while beating. Egg proteins set at moderate heat, so the sauce must be heated gently in the water bath and beaten constantly. Too much heat scrambles the eggs into lumps instead of a smooth, thickened cream.
