Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam to create the light, airy structure of the dish.
Heavy cream
Whipped to stiff peaks, adding richness and a soft, creamy body.
Powdered sugar
Stabilizes the whipped whites and adds sweetness to the meringue.

The step that matters

Folding the whipped cream into the meringue. Folding gently keeps the air trapped in both the meringue and the whipped cream. Stirring vigorously deflates the mixture, leaving the dessert dense rather than light and fluffy.

Swap the almond

The recipe marks almond as optional. How well each one fits the dish's main ingredients (egg, vanilla, cream, sugar, sherry):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Cocoafits less well
  4. Hazelnutfits less well

Fit is the average pairing score against egg, vanilla, cream, sugar, sherry. Candidates are from the same food group and used in at least 100 recipes.
