  3. Mash the mixture through a coarse sieve.

  4. Freeze the mixture.

  5. Simmer the raisins in a little sugar and water for a few minutes. Drain the raisins.

Freeze and finish

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Stewed and mashed into a smooth, tender base that forms the body of the frozen pudding.
Sugar
Sweetens the base and lowers its freezing point so it stays softer when frozen.
Cream
Whipped in at the end to add richness and a lighter, airy texture.
Raisins
Plumped in syrup, they add chewy texture and concentrated sweetness to the frozen mixture.
Apricot jam
Adds fruit flavor and sweetness to the apple base.

The step that matters

Adding the whipped cream late in freezing. Cream added while the mixture is only partly frozen can be overworked or fail to incorporate evenly; adding it when the mixture is very thick keeps it airy and well distributed.

Swap the raisin

How well each one fits the dish's main ingredients (apple, apricot, sugar, orange, almond, cream):

  1. Vanillafits better
  2. Peachfits better
  3. Figfits better
  4. Raisinthe original

Fit is the average pairing score against apple, apricot, sugar, orange, almond, cream. Candidates are from the same food group and used in at least 100 recipes.
