Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the macaroni

  1. Boil the macaroni in salted, boiling water for 25 minutes or until very tender. Drain thoroughly.

  2. Layer the drained macaroni in a deep fireproof dish.

Assemble and bake

  1. Add a thick layer of oysters on top, seasoning with cayenne, salt, and grated lemon peel.

  2. Pour the cream or White Sauce over the oysters.

  3. Cover the top with bread crumbs and brown in a 400°F (200°C) oven for about 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroni
Forms the starchy base layer that holds the dish together and gives it body.
Oysters
Provide the main flavour and a soft, briny texture through the dish.
Cream or white sauce
Adds moisture and richness so the layers do not dry out in the oven.
Bread crumbs
Form a crisp top that browns in the oven, adding texture contrast.

The step that matters

Drain the macaroni thoroughly. Excess water left on the cooked pasta dilutes the cream and sauce, making the layers watery and preventing a clean, set texture after baking.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, cream, bread, pepper):

  1. Lemonthe original
  2. Figfits about as well
  3. Plumfits less well
  4. Cherryfits less well

Fit is the average pairing score against oyster, cream, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
