Why it works: Crab and butter work together. They rank in the top 10% of all ingredient pairs, and cooks put them together in 812 recipes. Both carry nonanal, which smells fat, citrus. The science ↓
Soft-shell Crabs Fried
Ingredients
Directions
Prepare the crabs
Raise the ends of the crabs and remove the sandbags and spongy substance from beneath the shells.
Wash the crabs well and wipe them dry.
Sprinkle the crabs with coarse sea salt and black pepper.
Fry and serve
In a frying pan, heat equal parts of lard and butter over medium heat until boiling.
Carefully lay the crabs in the pan and turn them when partly cooked, leaving them longest on the white or underside.
Cook for 10 to 15 minutes, depending on the size of the crabs.
Rub a little fresh butter over the backs of the crabs when serving, and serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Soft-shell crabs
- Main protein; the whole soft shell becomes crisp and edible when fried.
- Lard
- Fat that carries heat evenly and browns the crab shells.
- Butter
- Adds rich flavor and browning alongside the lard.
The step that matters
Turning the crabs in the hot fat. Lay the crabs in gently so the fat does not splatter, and turn them once partly cooked so both sides brown evenly without the shell tearing or burning. Cooking time depends on crab size, so check for color rather than relying only on the clock.
