Prepare the filling

  1. Pass the mashed potatoes through a colander.

Coat and fry

  5. Fry until golden brown, then drain on paper towels.

Serve

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Form the bulk of the croquette and give a soft, tender interior.
Beef
Provides savory flavor and substance within the filling.
Butter
Adds fat and richness, keeping the filling moist and flavorful.
Eggs
Bind the filling and form a coating that helps crumbs adhere.
Stale bread or crackers
Form a crisp, golden crust when fried.
Cream
Adds moisture and richness to the potato mixture.

The step that matters

Frying the croquettes in hot lard. If the lard is not hot enough, the coating absorbs fat and turns greasy before it browns. Too hot, and the outside browns before the filling heats through. Keeping the oil at a steady frying temperature gives a crisp, evenly cooked croquette.

Swap the nutmeg
