Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Smothered Chicken

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Singe, draw, and split the chicken down the back.

  2. Wipe it with a wet towel, then a dry towel.

  3. Spread the chicken open and hold it in shape with a skewer through the wings.

  4. Place the liver under one wing and the gizzard under the other.

Roast

  1. Lay the chicken in a roasting pan.

  2. Add butter pieces and boiling water over the chicken.

  3. Sprinkle with salt and pepper.

  4. Cover with a second pan to trap steam.

  5. Roast in a 350°F (175°C) oven for about 1 hour, turning halfway through.

  6. When done, the chicken should be golden, not brown.

Finish and serve

  1. Optionally, place it on a hot gridiron breast down for 3-4 minutes to mark.

  2. Transfer to a hot dish, spread with butter, sprinkle with parsley, and let stand for 2 minutes before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, helping the chicken brown gently and stay moist while it cooks.
Broiler chicken
Provides the main protein, which the covered steaming and roasting cook through.
Boiling water
Creates steam under the cover, keeping the chicken moist during roasting.

The step that matters

Covering the pan to trap steam. The cover holds steam around the chicken so the skin does not dry out and the meat stays moist. Keeping it covered for the roasting period matters for a tender result.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, butter, pepper):

  1. Thymefits about as well
  2. Parsleythe original
  3. Garlicfits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against chicken, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
