What each ingredient does

Onions
Browned slowly to build the deep, savoury flavour of the sauce.
Flour
Coats the onions and thickens the stock into a sauce.
Butter
Fats the onions for frying and carries flavour through the sauce.
Stock
Forms the liquid base of the sauce.
Vinegar
Adds acidity that sharpens and balances the rich sauce.
Mustard
Adds sharp, pungent flavour that lifts the sauce.

The step that matters

Fry the onions until brown, without burning. Browning the onions develops deep, savoury flavour through the Maillard reaction. Burnt onions turn bitter and spoil the whole sauce, so they need steady heat and attention.
