Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Mix the flour and grated cheese together.

  2. Add cayenne pepper and then the butter.

  3. Add enough cold water to form a paste.

Shape and bake

  1. Roll out the dough thinly.

  2. Cut into strips ½ inch wide and 7 inches long.

  3. Bake in a hot oven at 400°F (200°C) for a few minutes until golden.

Serve

  1. Serve cold, tied in a bunch with a fresh ribbon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Grated cheese
Adds savory flavor and fat, and helps the dough brown as it bakes.
All-purpose flour
Provides the structure that holds the dough together and lets it be rolled and cut.
Butter
Adds fat that makes the dough tender and short, rather than tough.
Cold water
Binds the flour and butter into a workable paste without making the dough sticky.

The step that matters

Roll out the dough thinly. Thin dough bakes quickly and crisps evenly, while thick dough stays soft and doughy in the centre. Cutting strips of even thickness also helps them bake at the same rate.
