Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Roll out puff pastry very thin.

  2. Place one layer of puff pastry on a baking sheet.

  3. Butter the layer with preserves.

  4. Cover with another layer of puff pastry.

  5. Press the edges together.

  6. Trim the excess.

  7. Score the surface in squares.

Bake and finish

  1. Bake at 400°F (200°C) for 15 to 20 minutes until golden-brown.

  2. Brush the surface with a mixture of egg yolk and milk.

  3. Sift powdered sugar over the top.

  4. Return to the oven until nicely colored.

  5. Once cool, cut into pieces along the scored lines.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms flaky, layered sheets that puff and crisp when baked.
Preserves
Provide sweetness and fruity flavor, and their moisture softens the filling as it bakes.
Butter
Adds richness and flavor, and helps the layers crisp and brown.
Egg yolk
Brushed on top, it promotes a glossy, deep golden browning.

The step that matters

Return to the oven until nicely colored. Browning depends on heat and time, so pulling the pastry too early leaves it pale and underbaked, while leaving it too long can scorch the sugar on top.

Swap the strawberry

How well each one fits the dish's main ingredients (butter, egg, milk, sugar):

  1. Vanillafits better
  2. Figfits about as well
  3. Coconutfits about as well
  4. Strawberrythe original

Fit is the average pairing score against butter, egg, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
