Why it works: Pineapple and vanilla match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 911 recipes. Both carry ethyl isobutyrate, which smells fruity, ethereal. The science ↓
Pine-apple Mousse
Ingredients
Directions
Prepare the pineapple
Peel the pineapple and cut a few slices.
Lay the slices in a bowl, sprinkle with powdered sugar and a little rum, then cover and set aside.
Grate the remaining pineapple into a bowl.
Add vanilla, rum, and enough sugar to make it very sweet.
Set the bowl over ice and stir until very cold.
Make the mousse
Beat the cream over a pan of ice until it equals three times the bulk of the pineapple mixture.
Fill an ice cream mold with the pineapple mixture.
Fit the cover on tightly and seal the joint with a strip of muslin dipped in melted butter.
Pack the mold in layers of ice (3 inches) and salt (1 inch) and cover with a carpet.
Set in a cold place for at least three hours.
Serve
To serve, turn out the mousse and place the reserved pineapple slices and syrup around it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Whipped cream
- Adds air and lightness, giving the mousse its soft, airy texture.
- Pineapple
- Supplies the main fruit flavour and moisture that the mousse is built around.
- Powdered sugar
- Sweetens the pineapple and balances its natural acidity.
- Jamaica rum
- Adds aromatic depth to the pineapple flavour.
The step that matters
Keep everything very cold while beating and packing. Cream whips best when chilled, and the mousse must stay cold so it sets firm. Warm cream will not hold its air, and a loose seal lets the mold warm and the mousse weep.
Swap the pineapple
How well each one fits the dish's main ingredients (vanilla, sugar, rum, cream):

Fit is the average pairing score against vanilla, sugar, rum, cream. Candidates are from the same food group and used in at least 100 recipes.
